Carrot and Walnut Cake

Carrot and Walnut cake is my All-time favorite Cake

In winter it’s the easy and best way to feed my kids carrots and walnuts through this cake. In other words, it’s easy to make and yum to eat.

Moreover, my all family members especially kids love the cake fresh and warm. In fact, It gets finished in minutes. Do try this the recipe and tell me how it was. The carrot turns soft and gets dissolved.

Vitamin A enriched and awesome way to feed carrots and walnuts.

Ingredients

  • Whole Wheat flour/ Maida – 3 cups
  • Baking soda – 2tsp
  • Salt -1tsp
  • Powdered sugar – 1.5 cups
  • Refined oil – 1.5 cups
  • Eggs – 3
  • Grated carrot – 2 cups
  • cardamon powder – 1 tsp
  • vanilla essence – 2 tsp
  • Walnuts – handful

Instructions

Firstly, sieve maida, soda, salt 5-6 times. This is dry ingredients mixing.

The more you sieve the more fluffy cake will be as this way we incorporate air in mixture.

Beat oil with sugar. Next, add eggs one by one.

Similarly, beat the mixture until it is fluffy. This is called wet ingredients mixing.

In addition, add vanilla essence together with grated carrot and beat again.

Meanwhile, preheat the oven for 10 mins at 230 deg.

Finally, add the dry mixture as well as walnuts. Likewise, with little more beating the batter is ready to bake.

No need to beat vigorously or too much as too much beating gives cracks in the cake.

Bake this batter for 60mins at 230 degrees preheated oven.
