Welcome to A to Z of tiffin ideas with me. I am trying to give AtoZ suggestions for lunch box woes and today is Day 6 with letter F. So what’s for F tiffin

The rotis are made beforehand but cooked again with butter before making the Frankie.

  • 4 Flour Rotis {check ingredients below for roti}
  • 2 large Potatoes boiled and mashed
  • Green peas 1/4 cup  parboiled and crushed or mashed
  • 1/4 cup carrot finely chopped or boiled and mashed
  • Oil 1 tbsp
  • Cumin seeds 1/2 tsp
  • Ginger 1/2 inch piece finely chopped
  • 2 cloves garlic minced or use 1 tsp ginger garlic paste
  • Green chili 1 Green chili finely chopped
  • Red chili powder 1/4 tsp
  • a pinch Turmeric powder
  • 1/4 tsp Garam masala powder
  • 1 tbsp Fresh coriander leaves chopped
  • Amchoor/ Dry mango powder 1/2 Tsp
  • 2 tsp Frankie masala or chaat masala or Maggi masala-e-magic
  • Salt to taste

For The Rotis

  • maida 1/2 cup  and 1/2 cup wheat flour/ gehun ka atta
  • oil 1 1/2 Tsp
  • Salt to taste
  • 1/4 tsp oil for kneading
  • butter 2 tsp  for cooking
Steps
  1. Firstly, combine the plain flour, whole wheat flour, 1 tsp of oil and salt in a deep bowl and knead into a soft dough using water.
  2. Cover the dough with a wet muslin cloth and keep aside for 10 minutes.
  3. Divide the dough into 4 equal portions.
  4. Afterward, Roll out each into  roti sized circles
  5. Heat a Tava/ griddle and cook each roti lightly on both side on a medium flame for 1 minute and
  6. Place a roti on the tava and cook on a medium flame using little butter till both sides turn light brown in color. keep aside to cool.
For the stuffing

Heat the oil in a deep non-stick pan, add cumin seeds and once they splutter, add the ginger-garlic paste and sauté and then add the potatoes, carrot, green peas, ginger, green chilies, red chili powder, turmeric powder, garam masala powder, chaat masala, amchur powder, and salt and sauté on medium heat for two minutes. Add coriander and mix well and then transfer onto a plate and cool.

Next, Divide this mixture into required quantity, also, you can shape into four-inch-long cylinders for easy handling in roti rolls and shallow fry in sufficient hot oil till light golden.

Finally, Drain on absorbent paper and set aside.

Instructions To prepare Frankie
  1. Now place a roti on a clean dry flat surface/ or use the chopping board
  2. Place a potato roll on one side. If your kids like then you can Sprinkle some sliced onions, along with chaat masala or Maggi masala over it and roll the roti.
  3. Roll it up tightly, wrap in an aluminum foil/tissue paper to keep it intact. Repeat the same for more Frankies.
  4. Similarly, prepare the rest of the Frankies, wrap in aluminum foil, and ready to pack in tiffins.


Other ways for Frankie is you can make 
Cheese Frankie by using processed cheese over the stuffing, or Schezuan Frankie by using schezwan sauce, evenly on the roti, or Paneer Frankie by using paneer.

Chana Dal Fara is another popular dish of UP and Bihar. Fara is also called gojha or peetha in different parts of the state. It is a gujiya shaped steamed lentil stuffed dumplings. There are two variations of fara or gojha, one is made with wheat flour and another one with rice flour.

Today is Day 6 with the letter “F” of AtoZ challenge.

My theme for the challenge is ‘Tackling Tiffin tantrums” to help ease lunchbox woes for moms & kids.
