Zunka
Ingredients
- 1 cup: Chickpea flour (besan)
- 3/4 cup: Chopped onions
- 1 tsp: Red chilli powder
- ½ tsp: Turmeric powder
- 2-3 : Curry leaves
- 1 tsp: Coriander leaves
- 1 glass water
- For the Onion Mix
- 3/4 cup: Chopped onions
- ½ tsp: Garlic paste
- ½ tsp: Ginger paste
- ½ tsp: Chopped green chillies
- 1 tsp: Mustard seeds
- ½ tsp: Cumin seeds
- 1 tsp: Salt
- 4 tsp: Oil
Method
- Mix water, onions,
chilli powder, turmeric powder, curry leaves, coriander leavesand chick pea flour to make a `ghol ‘ or a wet mix. - Heat oil in a wok (
round bottomed metal pan). Add mustard seeds, cumin seeds, garlic paste, ginger paste, chopped onions, chopped greenchillies and salt. - Stir till the onions turn brown. Add the onion mix to the wet mix. Stir briskly for 4-5 minutes till all the water evaporates. The Zunka is ready.
- Serve with garlic chutney and `
jawaar ‘ or `baajra ‘rotis .
