Welcome to A to Z of tiffin ideas with me. I am trying to give AtoZ suggestions for lunch box woes and today is Day 15 with the letter O.

O tiffin can consist of

Oats cookie

Oat Waffle

Oats Upma

Orange for fruit

Oreo biscuits for sweet

Oat, Whole Grains, Food

There are a lot of variations of Oats cookie, will share a simple one, you can add  Hazelnuts, Almonds, Walnuts, raisins or any nuts to it

  • 1 1/4 Cup softened butter
  • 1/2 cup white and 1/2 cup brown sugar
  • 1 Egg
  • 1 tsp vanilla essence
  • 1 1/2 Cup all-purpose flour
  • 1 Tsp Baking Soda
  • 1 Tsp dalchini ground cinnamon
  • 1/2 Tsp salt just to balance the savory taste
  • 1/4 Tsp  jaifal powder/ ground nutmeg
  • 3 Cups Oats

Cooking Instructions

    • Heat oven to 375°F.
    • In a large bowl, beat margarine and sugars until creamy. Add egg and vanilla essence and then beat well.
    • Add dry ingredients flour, baking soda, cinnamon, salt, and nutmeg; mix well.
    • Add oats; mix well Add 1 cup of raisins and chopped nuts mix of your choice.
    • Spray two large baking sheets with nonstick cooking spray.
    • Drop the dough by heaping tablespoons onto the baking sheets, leaving about two inches of space between each cookie OR roll into balls and flatten slightly.
    • Bake until lightly golden brown all over, 15 to 18 minutes, rotating the baking sheets halfway through the baking.
    • let it Cool and remove to wire rack. Store tightly once cooled.

Oats Upma

    • Oats 1 cup, dry roast for 5 minutes and cool I used Quaker white oats
    • 2 tbsp sooji/ rava/ semolina
    • Carrot 1, finely chopped to cubes
    • French Beans 5-6, string and chop into pieces
    • Green peas fistful (optional)  
    • ½ cup finely chopped onion
    • Green Chilies 2, slit
    • Ginger 1tsp (grated)
    • Turmeric powder 1/2 tsp
    • Salt to taste
    • 2 cups Water 
    • Ghee 2 tbsps
    • Oil 2 tsp
    • Coriander leaves 1 tbsp, finely chopped

Tempering

Vegetable Oats Upma

    • mustard seeds (rai/ Mohri) 1 Tsp
    • cumin seeds (jeera ) 1 Tsp
    • 2 teaspoon urad dal ( black gram)
    • 3-4 green chilies
    • 1 tsp turmeric powder (Haldi)
    • 15 -20 curry leaves.
    • 1 tbsp oil
    • salt to taste
    • Cashew nuts 4-5

Method for making Oats Upma

Roast Oats for 3-4 minutes on medium flame with little or no oil . remove it from flame and keep it aside.

Heat oil and ghee in a heavy bottomed vessel. Add mustard seeds and allow it to splutter then add urad dal and cumin seeds in the oil and cashew nuts, and curry leaves and saute for a minute on low to medium flame. add curry leaves.

Add the onions, ginger and green chilies and saute for few mins. Add carrots and beans and saute on a medium flame for another 2-4 mins. Add turmeric powder and salt and mix.

Place lid and cook on low flame for 6-7 minutes. Add 2½ cup water. Let the water boil for 2 -3 minutes. Reduce flame, place lid and cook for 6-7 minutes or till the water is half absorbed.

Add the dry roasted oats and semolina to it and mix. Place lid for 3 minutes. Turn off the heat and Mix it nicely and keep it covered with a lid for 1-2 minutes.

Add lemon juice and salt if required You can garnish it with fresh grated coconut and coriander.

Once cool its read to go in tiffins

  2. I do prepare oats upma but do nit add cashew.

    I crush oreo biscuits and add it to vanilla icecream. Tastes yummy. My son loves it.

  5. I grind oats into a fine powder and then make Upma from it. Adding broccoli helps to balance the carbs and proteins.

      Yes I too grind oats but not for upma, just for paratha mix or cutlet. Will add broccoli from future of course it’s protein rich. Thanks for the tip.
