Carrot & Walnut Cake

My All time favourite in winters to feed my kids carrots and walnuts is this cake. Easy to make and yum to eat. My kids including all family memebers too love this when its warm only and is finished in minutes. Do try this, as the carrot is not seen or felt for kids so chanceace they will remove it.

Vitamin A enriched and awesome way to feed carrots and walnuts.


  • Whole Wheat flour/ Maida – 3 cups
  • Baking soda – 2tsp
  • Salt -1tsp
  • Powdered sugar – 1.5 cups
  • Refined oil – 1.5 cups
  • Eggs – 3
  • Grated carrot – 2 cups
  • cardamon powder – 1 tsp
  • vanilla essence – 2 tsp
  • Walnuts – handful


Sieve maida, soda, salt 5-6 times. This is dry ingredients mixing.


The more you sieve the more fluffy cake will be as this way we incorporate air in mixture.

Beat oil, sugar and then add eggs one by one and beat till fluffy. This is called wet ingredients mixing .

Add vanilla essence, grated carrot and beat again.


Finally add the maida mix and walnuts and with little more beating the batter is ready to bake. No need to beat fast or too much as too much beating gives craks in cake.


Bake this batter for 60mins at 230 degree preheated oven.
